I had yet another failed attempt to make cioppino. My big mistake was using jarred marinara sauce instead of chopped tomatos. So much for using a short cut method. In order to salvage dinner, I wound up turning the whole thing into a seafood spaghetti dish.
Here's what I did.
1 small onion, finely chopped
1 jar TJ marinara sauce
1 cup white wine
Hot pepper flakes
Crystal hot sauce
Pinch of oregano
1 bay leaf
Olive oil
1/2 package seafood medley
1 filet rock cod, cut into 1" pieces
Basil chiffonade
Sauté onion in a bit of olive oil until soft. Add some hot pepper flakes. Add marinara sauce, wine, oregano, bay leaf and hot sauce to taste. Simmer about 30 minute, or until the sauce reduces somewhat. Add seafood and fish chunks and poach gently in the sauce for 5 minutes. Serve over pasta and top with basil.
